Although many people believe ‘espresso’ is Italian for ‘express’, due to the speedy nature with which these beverages are made in cafes, the word actually translates as ‘pressed out’. This refers to the nature in which espresso machines work and how espresso coffee is made. Espresso is made by using steam pressure or water pressure to push hot water through the coffee creating a richer and fuller taste than you will find with instant coffee.
 
Espresso machines come in two forms, pressure machines and pump machines. The pressure machines operate by boiling water to create steam which builds up pressure to force the water through the coffee. This has the benefit that the steam can be used for milk-frothing, but the boiling temperatures are too hot to make a genuine espresso. Pump machines operate on the same principal but use water to build pressure instead of steam. Pump machines will produce a higher quality espresso but also cost more money than their pressure counterpart. Espresso machines can also be used to make cappuccinos and lattes.
